The Best One-Handed Snack for New Moms
This is a recipe that I shared on my previous business's blog, Motherline. But it's too darn good not to share again.
This is one that I find myself making over and over again for my postpartum clients, because new parents need quick and easy and delicious one-handed snacks. And lots of them.
And this is why these No Bake Nut Butter, Oats, and Honey Energy Bites are the perfect food. They tick every single one of those boxes. And listen, don't skip on the chocolate chips. My motto for new parents is always #treatyoself.
This recipe comes together super easy. Just dump all the ingredients in a large bowl and stir. These energy bites are easier to roll out when they're cold, so put the bowl in the fridge for about 25-30 minutes (or longer if you are juggling a million different things like most moms are). Depending on how large you roll them out, this recipe should make between 20-30 balls. They'll last in the fridge for up to 4 or 5 days, if you don't eat them all before then.

No Bake Nut Butter, Oats, and Honey Energy Bites
INGREDIENTS:
2 c. rolled oats
1 c. nut butter (peanut, almond, cashew, or sun butter)
2/3 c. honey
1/2 c. unsweetened, shredded coconut flakes
1/4 c. ground chia seed
1/4 c. mini chocolate chips
STEPS:
1. Mix all ingredients together in a large mixing bowl until well incorporated.
2. Chill in refrigerator for 25-30 minutes.
3. Hand roll into bite-sized or tablespoon-sized balls.
4. Store in refrigerator in air-tight container for up to 5 days.
